BANANA PANCAKES (GLUTEN FREE & PALEO):
▪️1-2 (100g) peeled, ripe banana
▪️2 (100g) eggs at room temperature
▪️ 1/2 cup (50 g) almond flour (or meal)
▪️1/2 tsp baking powder
▪️1/4 tsp salt
▪️1 tsp ghee
▪️ In a medium-size mixing bowl, add the all of the ingredients (except the ghee) and mix to combine well.
▪️Once a batter has formed, you’re ready to cook!
▪️Heat a cast iron pan to medium temperature and add some egg rings.
▪️Grease the surface under the egg rings with the ghee.
▪️Evenly pour the pancake batter into the egg rings, until about halfway full.
▪️Allow the pancakes to cook, undisturbed, for about 1-2 minutes or until bubbles form on the surface.
▪️Remove the egg rings with a butter knife, then flip the pancakes.
▪️Cook for another 30 seconds or until set.
▪️Remove from the skillet or griddle and repeat with any remaining batter. ▪️Serve warm topped with coconut yoghurt, granola and wild blueberries.
