Paleo Cookie Pie 🤤🤤 this grain free, dairy free, oil free, refined sugar free pie is somehow fluffy and gooey at the same time, and so so good!!!

Bets part: it’s crazy easy to make and customizable for what you have on hands. Definitely under bake it and serve warm with ice cream for major pizookie vibes.

NOTES: use any nut butter you want, I used cashew since it tastes most like cookie dough. Flax eggs can sub for regular eggs (it’ll be more dense + doughy). I’m thinking oat flour, gf flour or regular flour should sub 1:1 but comment if you try and substituted for if it works for ya!!

TIPS: 1️⃣ You can sub for another drippy nut butter 2️⃣ Haven’t tested other flours, but think oat or gf flour could prob sub for almond flour 3️⃣ flax eggs can sub for regular eggs to keep vegan 4️⃣ Any granulated sugar works, but I love @missjonesbakes coconut smart sugar since it has 50% less sugar and 3x fiber

Peanut butter blondies
1/2 cup cashew butter
2 eggs
2/3 cup @missjonesbakes coconut SmartSugar
1 tsp vanilla extract
1 tbs coconut oil
1 cup @bobsredmill almond flour
1 tsp baking soda
3/4 cup @hukitchen no sugar added chocolate chips.

Directions
Heat oven to 350. Line a 9” cake tin with parchment paper or oil it.
In a mixing bowl, combine wet ingredients until well combined. Add in dry ingredients. Spread batter into cake tin and top with extra chocolate.
Bake for 14-20 minutes or until edges are golden (personally I like the middle GOOEY so I tend to under back). I served with @nadamoo dairy free cookies n cream ice cream
